There are many ways to peel walnuts. Here are four more practical methods:
1. Stacking method. Stacking method is our country's traditional walnut peeling method. The technical points are: the fruit is harvested and transported to the outdoor cool place or room in time, avoid exposure in the sun, and then piled at a thickness of about 50 cm (too thick and perishable). If a layer of 10 cm thick wheat bran or dried leaves is added to the fruit heap, the temperature inside the heap can be increased, the fruit ripening can be promoted, and the speed of peeling can be accelerated. Generally stacking 3 to 5 days. When the green peel peels or cracks more than 50%, it can be peeled with a stick. For unpeeled people, they can be stacked for several more days until they are fully peeled.
2. Pharmacy method. After the fruit is harvested, it is dipped in a 0.3% to 0.5% ethephon solution for approximately half a minute, and then stacked in a shade or room at a thickness of about 50 cm to maintain a temperature of 30°C and a relative humidity of 80% to 90%. The peel rate can be as high as 95% or more in about 5 days. If the stack is covered with a layer of about 10 cm of wheat stubble or hay, it can be peeled off in about 2 days. The length of the ethephon ripening time is related to the concentration of the drug and the maturity of the fruit, that is, the higher the fruit maturity or the higher the drug concentration, the shorter the ripening time.
3. Spray ethephon before harvest. When the walnuts are close to maturity, press 1 kg of water and add 800 to 1200 mg of ethephon solution. Spray on the walnut fruit surface 10 days before picking. After 10 days picking, the fruit cracking rate can reach 95%. ~ 2 days.
4. Freeze-thaw peeling method. This method is a method of freezing walnut skins at a low temperature and then removing the green skin by high temperature melting. The mature walnuts are picked out for diseases and pests, and then frozen at a low temperature. The freezing temperature is -5°C to -25°C. After the walnut peels freeze, the temperature rises above 0°C, and the peels are removed mechanically or manually. The criteria for thawing is that all of the rind is icing, and there is significant ice cutting embedded in the rind.
