The quality of tea is closely related to the standards of picking fresh leaves, picking time, picking method, and management of fresh leaves. First, the picking period and time. The sprouting and growth of tea plants is seasonal, and it is different from varieties, altitudes, climatic conditions and tea garden management. In particular, the pruning and technical adjustment measures of tea gardens are the key to adjusting the picking period. Selection of high-quality high-grade ecological tea should be sunny. The best time is from 9:00 am to 4:00 pm. Commonly referred to as "Latnogreen" leaves, the quality is best. The tea picked before 9:00 am is called "early green", followed by quality; After 4 o'clock in the afternoon, the tea collected was "late green" and was of poor quality. Therefore, the selection of “Latnogreen” leaves adopted on sunny days is the key to obtaining high-grade ecological tea.

Second, the picking method. Tea picking methods are: hand picking, knife cutting and machine mining three. Hand extraction is the most common ancient method currently used, and is particularly suitable for the production of high-grade tea. In the long-term practice, the “hukou to core” picking method separates the thumb from the index finger and inserts it from the top center of the shoot tip. It is slightly twisted and lifted upwards to pick up the shoot tip, which has the advantage of avoiding pinching in the hand. Buds were heated and crushing, followed by uniform fresh leaves. Knife-cutting and machine-cutting methods, knife-cutting methods often use half moon-shaped tea knife to cut tea. The machine mining method uses tea pickers to cut buds. The quality of the fresh leaves picked by these two methods is obviously worse than that of hand-picking. The performance of picking the leaves is poor, but the difficulty in picking tea and the increase in man-hours cost can be overcome, and the production cost can be reduced.

Third, picking notes. First, the maturity of leaf collection should be appropriate, and tea should not be too tender or too old. Most of the 3-6 leaves are generally picked. If 2-3 leaves are adopted, new leaves still remain in the tea tree. This will affect the yield. If the entire shoot is picked, it will affect the quality. For this reason, it is recommended that the shoot be picked first. 2-3 leaves, and then take a new leaf production separately, this can not only improve the quality of tea, but also increase tea production. The second is that the spring tea is more tender and can be collected in batches in a timely manner, that is, “appropriate early in the early stage, just in the middle period, and not too old in the late stage”. Appropriately tender summer tea, the principle of appropriate autumn tea. Picking should be done "three without" and "three separates", namely "without stem, without old leaves, without single leaves," and "different varieties of fresh leaves separate, early morning, late leaves, different Location leaves separately." Only by insisting on doing so can we produce high-grade ecological "noon" tea.
