Yesterday we celebrated our sweet Skylar's first birthday. Can you believe it? It feels surreal to think he’s already one. He’s been such a joy, filling our home with laughter and love. It’s hard to believe how quickly time has flown by since that day he first entered our lives and completely transformed everything.

To celebrate, I decided to bake some special treats for him. One of those was this amazing confetti popcorn recipe, which turned out to be a hit in our household. Every time I turned around, someone was sneaking a handful of the popcorn—it was almost gone before the party even started! Making confetti popcorn is surprisingly easy, and now that I’ve got all the supplies on hand, it’s something I’d definitely recommend for a summer movie night or any casual gathering. Plus, it’s super colorful and festive, making it perfect for parties.

Even if you don’t need them right away, I highly recommend trying this confetti popcorn recipe—it’s absolutely delicious. Trust me, it won’t last long once everyone gets a taste!

Confetti Popcorn Recipe

  • 3 bags of microwave popcorn (we used kettle corn because it’s our favorite)
  • 8 oz of white almond bark
  • Your choice of sprinkles

Start by popping the popcorn according to the instructions on the package and transferring it into a large mixing bowl. Next, melt the almond bark in a microwave-safe container, heating it in 45-second intervals while stirring frequently to prevent burning. Once the almond bark is fully melted, pour it over the popcorn and mix thoroughly until each kernel is evenly coated. Then, sprinkle your favorite confetti-style sprinkles over the top and gently toss to ensure they stick. Finally, spread the popcorn out on wax paper to cool and set before serving.

As you might expect, having little hands around while you’re making this snack can lead to some unexpected results. By the time I finished, half the batch had mysteriously disappeared!
