Traditionally, miso glazes pair beautifully with rich, fatty fish such as salmon and cod. However, here at Niceland, we've decided to experiment with this delightful glaze and paired it with Icelandic Wolffish. This fish is uniquely sweet, akin to crab, yet has a higher fat content and a texture similar to halibut, making it ideal for absorbing the miso marinade. Whether seared, roasted, or cooked in an air fryer, it turns out absolutely delicious.

Marinade Ingredients – Enough for 4 servings of 6 oz Wolffish portions

- 3 tablespoons white miso
- 2 teaspoons mirin (can substitute with white wine)
- 2 tablespoons sake
- 2 tablespoons brown sugar
Instructions
- Mix all ingredients in a bowl and combine thoroughly.
- Transfer the mixture to a pot and bring it to a boil. Let it simmer briefly to evaporate any alcohol, then allow it to cool down completely.
- Apply the cooled marinade generously over the Wolffish fillets. Place them in an airtight container and marinate for at least an hour, though marinating for 2-3 days will yield the best results.
- Lightly grease your air fryer basket and arrange the marinated fillets inside. Set the temperature to 350-375°F and cook for about 13 minutes, or until the internal temperature reaches 145°F.
- Serve with sushi rice, garnished with furikake (a flavorful Japanese seasoning blend made from sesame seeds, dried fish, seaweed, salt, and sugar).
