Making Compound Vegetable Juice

In recent years, nutrient-rich vegetable juices containing a variety of essential minerals have gained widespread popularity as healthy beverages. By using seasonal vegetables such as wax gourd, carrots, tomatoes, celery, spinach, and lettuce, it's possible to create a delicious and highly nutritious compound vegetable juice. 1. **Raw Material Selection and Preparation**: Begin by selecting 5–6 fresh, worm-free, and mold-free tomatoes, along with one piece each of wax gourd, carrot, lettuce, celery, and spinach. Thoroughly wash and separate the vegetables before crushing them in a crusher. Place them in a steamer and heat at a temperature between 70°C and 90°C to enhance flavor and preserve nutrients. 2. **Juice Extraction and Blending**: After the initial treatment, the vegetables are squeezed using a beater with a 3 mm diameter and a 5 mm sieve. The tomato juice makes up about 70% of the mixture, while the remaining 30% consists of the other vegetables. These are combined in a pottery jar or similar container and stirred thoroughly. Then, syrup is added to reach a sugar content of 8–10%, and the acidity is adjusted to around 0.3%. After that, the mixture is finely ground using a colloid mill and filtered once to ensure a smooth texture. 3. **Degassing and Packaging**: Once the juice is ready, it undergoes homogenization, sterilization, and packaging. The raw vegetable juice is first preheated to 80°C, then subjected to high-pressure treatment (180–200 atm) to ensure even mixing. This process helps to create a more uniform and flavorful blend. Afterward, the juice is flash-pasteurized at 120–135°C for 10 seconds. It can then be bottled, sealed, and cooled gradually when it reaches around 90°C. Alternatively, it can be bottled while still hot (above 75°C) and sterilized in boiling water for 10–15 minutes before being cooled down. This method allows for the production of a high-quality compound vegetable juice that is both cost-effective and rich in nutrients. With the availability of a wide range of seasonal vegetables, this juice offers a unique taste and is an excellent choice for health-conscious consumers.
